I think your in a bit of a stickle there as MS probably get hundreds of personal accounts hacked per day and I doubt they have the resources to solve each and every one of them day in day out. Multifactor probably would have stopped this - it's a lesson to us all for personal accounts. If you have credit cards on that MS account (for xbox live etc) i would suggest you report that to your card company or put a temprary hold on it.

SIMS does need access to the S drive for quite a few things stored in the subfolders. I used to map mine and hide it in the HPO settings so the users couldnt see/navigate the S Drive

If that's a legit copied and pasted path from sims then there is a space in there which shouldnt be there either.

Most schools are gonna have at least 48 cores total - many more like 148 so that's quite an extra monthly cost. You may decide it's worth it!

Check if the GPO optional setting "Apply once and do not reapply" Is set or not in the additional properties on the drive map?

I don't think it's the datacentres that you need to worry about it's the small local exchanges and mobile phone masts that are gonna let you down.

TBH the DMX stuff is a bit of a nightmare - I call in a local Stage Lighting company if theres a problem here as it's literally 30 years old and the wiring is a bit of a mess.

I think the key thing to remember is that you are taking about replacing a bit of technology that's built into almost every server you can buy that isn't garbage, it actually works really well and really reliabily and has done for many decades. It's not a black and white decision. Having not lost a single RAID array in 24 years I have to say I would need some convincing. But there are very convincing argments above. If I was starting from scratch now with my infrastructure I would look, and try ZFS. It reminds me of a saying my good old Head of DT used to say back in the day. he had a saying for every situation, KISS. Keep It Simple, Stupid - I agree with this as the more complex you make something the more unreliability and difficulty you introduce. This is why I have always disliked SANS etc as they dont really bring much to the table other than significant extra complexity and cost. I did view ZFS as similar but my mind is changed now.

I would say yes bring them into one tennant. Summer hols would be the ideal time to take a deep breath and get on with it - so start planning now. If you've got full admin control of both tennants, it shouldnt be too bad.
