I don't find the 100Mbs a problem, it's not like the students are creating huge files, and all accessing massive databases at the same time

I think you'll find that this is correct, it's not backing up the files in the usual manner, but creating a semi-hidden copy

How about setting up Shadow Volume Copy, run it every hour. Even if they do delete a folder, you at the most, an hour behind when you recover the deleted work, and it only take a second to recover deleted work

I used to be a contractor, and aside from the occasional lapse in payment from the agencies I worked for, I never had a problem with them.
