The two VM's are Server 2012 2xvCPU with 2GB RAM. The token physical box is 1 x Quad Xeon with 8GB RAM.

I had the exact same thing when the old Head of IT bought 3 Samsung Tab2's without any consideration on their management. They are now given out as glorified video cameras as no solutions were ever found for managing them outside of using Meraki systems Manager.
