Whiskey in the jar doesn't count IMO, as it is a "traditional" Irish song, so they're all covers.

I like Alabama 3's cover version of "Hotel California" - but I don't think it makes "better". Also worth pointing out "The tide is high" which was a cover when Blondie did it, and was more recently heavily abused by some girl band - but hte original was actually sung by a male group.

Reel Big Fish - Brown Eyed Girl (originally by Van Morrisson, I wouldn't say it's 'better' per se, but different and worth a look :))

Arctic Monkeys - Love Machine (yes, the original is by Girls Aloud, so it's not too difficult to make it better, but it's a genuinely fun song IMO :p)

Jimi Hendrix - Hey Joe (awesome song, originally by The Leaves)

Personally I quite like Muse covering Feeling Good by Nina Simone......I would say they are on a parr, but for different reasons.

 

If you get a chance check out MPHO and Placebo both covering (very differently by the way) Kate Bush's Running Up That Hill.
