How many PCs are you wanting to activate windows on? What you need to do is setup one KMS Server which is via a couple of command prompts, this takes the KMS key and activates against MSFT. Your workstations don't specifically need a product key, however you can enter one of these - Appendix A: KMS Client Setup Keys as appropriate this tells them you need to find a KMS somewhere on the network to activate from not MS. Once that is done you will be fine, it takes a minimum number of machines on the network before they activate from KMS.

Worth checking the history of your docks if you are going that way, as has been said Dell enterprise do true docking stations and they have been the same connector for years (we have a LOT of Dell docks where I am and thus use Dell laptops due to that), New "sexi" Lenovo kit that people like and want is non-dockable without a USB3 dock which the Lenovo one is nice it has dual VGA, USB3 Ports, Networking etc... so well worth looking at and considering them as once you have 70 docks you are basically stuck with that choice for a long time with vendor specific docks and if that vendor changes the dock connector you are stuffed. If I was to do it in a school and had to have docks, I'd be going for the new USB 3.0 ones as the drivers for them go on all the makes and gives you some level of general docking VS a vendor specific dock as I would have fear that I'd spend say £10K on Lenovo docks and them change the connector in 2 years time so you are not able to dock the new ones.

Server Licensing on EES is full licenses not upgrades that is the Desktops that are upgrades only. How are you licensing the Server OS currently depends on your question. You can get different version which give different virtualisation rights, for instances Datacentre gives unlimited VMs on that host so you need to see how things are licensed currently.

Have they set it up as a shared workbook? Share a workbook - Excel - Office.com is a rough guide from MS. It doesn't have to be stored on SharePoint either just in a shared drive. I used that way with various things and it wasn't too bad, occasional glitches but it did the job.
