That's a very open ended question, depends on your setup. For instance I've 2 vmotion nics, 2 network nics and 2 storage nics per host. if you've no SAN then the storage is obviously not needed, but I can't see a reason why you'd not team any available nics for vm connectivity.

I'd build a new one as a "just-in case" - even with everything moved over it can be handy to have certain things on site. And yeah, remove the others, it'll freak if there's remaining dependencies, which can point to things you've yet to remove/repoint.

The data will be removed after the retention expires, but the space in the DBs will be retained as white space, the DB files will not reduce in size. If you've data to keep on site I'd suggest making a new DB (or several) and moving and mailboxes to it- it'll then only be the size of space needed.

If you run an nslookup to it, is it an internal server replying, or a non-authoritative answer? Does it resolve to autodiscover.outlook.com?

if you can't ping autodiscover.{youremaildomain} internally then you will need to add a cname for that to autodiscover.outlook.com

I've had previous Galaxys, and now have an S8plus, and can say it's definitely the best they've put out with regards to OS customization. It's less intrusive than previous versions, on older galaxy models I'd usually install a third party launcher, but I've not felt the need to do it yet. Most of the third party stuff can be ignored or replaced, it's only really the settings that remains changed, and they've not gone too overboard with that this time. Having gone from a Nexus 6P to this I'm not feeling the "interface whiplash" you'd get with older samsungs.

I'm not sure if the edition you're using is different, but I'd suggest if you've historical data available to look at the load over a period of time

Maybe look at rightsizing your CPU allocation? That one VM listed has half of your logical processors. The reason the utilisation is low may be because the machines actually can't utilise it. if you look at normal performance stats for that machine, does the cpu use sit under 50% if so, then halve it, and all the others, you can see the impact it's having using the "cpu-ready" metric in the performance stats. By consuming CPU time with idle processors you're not only making that machine wait for available slots, but you're also denying those slots to other machines.
