if you edit the student policy you can do this

Aministrative Template - System - Ctrl+alt+del options,

here you can remove task manager, lock computer, change password and logoff options

We encourage kids to lock their computers if they're going to the printer or stepping away from it for a moment. We had a spate of evil children doing things to others documents while they were away from their computer.

We get the odd one leaving their computer locked or locking it instead of logging off but we wouldn't consider it a problem here.

You can diable those windows hotkeys in a GPO too if you have 2003 server.

User setting > Windows Components > Windows Explorer > Turn off windows+X Hotkeys

yeah I know. I just wanted to make them do a bit of background reading. Reason being that I never learn anything if I'm given the full answer ;)
