I use Spiceworks and have done for many years. It's completely free and I had been running the on-site version, which requires a server to run it on. I used it purely for the Help Desk and don't use the more advanced features, like the inventory or purchasing. Spiceworks offer a free cloud-hosted version (less features than the on-site version) and it made sense for me, meaning I can have one less VM running. It does AD integration/authentication via a tool you install on a local server and manages fine as a help desk.

OSTicket - have it running on a VM running Server 2019 with IIS, MySQL and PHP. With the AD Plug in installed (that uses LDAPS also) works a treat. Have an Office365 mailbox setup for it as well that it polls on a regular basis so tickets can be raised via e-mail as well.

I've created an it helpdesk channel in the General Staff group in Teams. it seems quite popular as other staff trawl through it an offer advice or commiserations. I'd tried spiceworks but always fell back to email.

I'm primary school, I use spice work cloud mainly because I can access it in ipad and have it on the go.

I use contracts section which is very useful for me

SysAid would be another choice, used that more than a few years ago.

Manage Engine is a good choice for bigger teams as well, used that at my last place. You can do things like auto job allocation and exclude members of staff. I think there is a free version

OSTicket here, been using it for years, has it's foebles, but AD integration makes it a breeze, not to mention ours is Linux based so fit and forget, until you actually need to update! We also have it set so people can just email helpdesk@ so they never have to go near the web interface if they don't want!

Spiceworks at our place with Let's encrypt for HTTPS. We have alsorts of apps from the spiceworks center performing rules and views.

The only thing i wish for is RichText formatting and the ability to add more than one attachment to a comment.

I have 5 spiceworks running (5 VMs but they work well) for Site Maintenance faults/requests, Personnel, IT helpdesk, Finance helpdesk, general Admin. Can't get much easier for the users as they just email and it gets allocated, and email replies, and then closed.

Has loads of other useful features but we don't use them all. Their support has been very good in the 3 times i've contacted them in 10 years!

The issue going forward with Spiceworks On-Prem is the Email Authentication support, although current delayed its going to return and Spiceworks have no said they won't be updating the app to support a new auth method. Spiceworks Cloud is based in the US so far from ideal for UK Schools. They are introducing a on prem version of the Cloud Helpdesk but it's still very much a beta and doesn't support ticket migration. So from my point of view, Spiceworks doesn't currently have a long term option for schools to move to.

Could the new OnPrem version work along side the old version which would be used as "reference only"?

Yes although it would still existing as two separate versions. My understanding of the 'Help Desk Server' is its a VM setup to run the cloud helpdesk code.

That's what i would have thought as well. Even if the old version of spiceworks was installed on a Desktop device on the internal LAN. At least you still have the old tickets to refer back to as a knowledge base.
