bossman Posted October 9, 2014 Posted October 9, 2014 White wine vinger 2 x tablespoons Good virgin olive oil x 5 tablespoons Mustard English or French (Dijon) x 1 teasponful Whisk vigorously until all emulsified and then pour over salad, mix the salad from the bottom to the top and then serve, I have found this to accompany many salads and it tastes heavenly, This is my own recipe and others might not find it to their taste............................tough!
pcstru Posted October 9, 2014 Posted October 9, 2014 Buy or make some nice dressings. Probably my favourite is a proper Caesar dressing with fresh marinaded anchovies for a bit of zing. Salad without dressing should just be banned! Add some fruit. Finely chopped apples & halved grapes work well in most types of salads. Nuts or seeds can add flavour and texture. Cooked lentils allowed to cool and then marinaded add texture and hold the dressing. Marinade chopped tomatoes in balsamic vinegar then drain, again can add a little zing. Mix in fresh herbs, flat leaf parsley or perhaps a little coriander. Search and just try new things!
HarryMonkey Posted October 9, 2014 Posted October 9, 2014 Unfortunately, adding shop bought dressings is just going to counteract your healthy eating. Most of them are so packed full of fats/calories/sugar/salt. Try making up different salads, olives, peppers, corn, a bit of vegetable rice, boiled egg, add in some lean beef, tuna low fat cheese etc. Have a look at making your own dressings, that way you can control what goes into them.

teejay Posted October 9, 2014 Posted October 9, 2014 Make your own dressing, just get some decent extra virgin olive oil and some lemon juice or balsamic vinegar, mix in ratio of 3:1 and add things like dijon mustard, chopped herbs, onion, garlic, chilli etc. Just experiment and make to your own taste. I also like oily fish, olives, feta cheese, some nice spicy rocket, gives a good kick to it. Also try growing your own salad leaves, they have much more flavour. They can easily be grown in one of those window box type things so don't take up much space. Just keep picking the outer leaves rather than the whole plant and they will last for ages.

Most of the supermarkets sell trays of "living lettuce" for about £1 that you can grow on yourself and pick like this. I buy them because they're handy for our tortoise! The bonus is that we have a constant supply of leaves for salads, sandwiches, etc

Bompalompalomp Posted October 9, 2014 Posted October 9, 2014 Time for my veggie side to shine. Get a block of tofu. Fry it and season it like you would caesar salad chicken. Even better, get the seasoned chicken style strips of quorn. Quorn is amazing. Wine vinegar is amazing. Mix types of lettuce! The leafy ones you can grow and iceberg are great together, the bags of generic leaves like spinach you can get are great too. Croutons fill out a salad brilliantly if you don't mind the carbs. Same with cous cous. Watercress. Watercress. Watercress. Thousand Island dressing is one of my favourites and you can basically make it yourself easily. And olives! Black and green olives! Gosh, I'm hungry.
