I'll second buying Dell servers on the used market. Bought two R730 like that at half the new educational price. Put some fast SAS drives in it, bring all firmware up to date and you have servers that will be reliable and last a long time.

We have deliberately not assigned a DPO based on the same advice. I've been to ISBA, Farrer and Veal Wasbrough seminars and they are all in agreement. No-one in a typical independent school has someone with the skills required for the job and no-one (me especially) wants the liability with no upside. I do recommend the outcome and you can start now by joining the BCS and documenting all your CPD. Build up a log of every bit of training or new thing you learned in your everyday work. New server installation, new application, different way of doing things, project work etc. That will become your key document to maintain for your entire working life, as important as your CV.

If you're an MBCS then try to work towards getting CITP (Chartered IT Professional). It takes a while and the exam is a bastard but it's worth setting chartership as a goal.

My hours are 08:30 - 16:00 but I typically get in around 05:40 in the morning. The pressure of work and long journey are the main contributors. I really need a 2-hour window in which to do maintenance without staff being around and the evenings are no good as it's a boarding school. It's no good me moaning about the SLT as I'm in it!

I'm a morning person and get up at 04:40 to beat the M3 traffic and get to work at around 05:40 for a 2-hour window where I can update servers etc. without the staff bothering me. By 16:00 I'm knackered and do not enjoy the 50-60 min journey home through heavy traffic. I wake up somewhat in the evenings and value my personal time until I go to bed at 22:00. Weekends I have more of a lie-in, until 09:00 or so!

The various GDPR seminars I've been to all say that we have to have a plan in place and to be implementing the actions. None of them suggested that any educational establishment would have all actions completed by 25th May. After all, we still have a school to run and all this is additional workload.

We put 250GB SSDs and at least 4GB RAM in every machine. It works very well with W10 that seems to go into turbo mode with SSDs. Nothing should ever be saved locally, it should all redirect to network folders, so the space is fine even for 100 user profiles.
