You can use the login hint to pass the email address across to Office 365. Were the schools using an A1 Plus licence, if so MS is pulling them at the moment and they will move to an A1 licence which does not include Desktop M365 Office. You need to move to A3 or get the Office 365 Apps via Volume Licensing
