You need to find out what the end users want/need and tailor the solution to that - every school can have a different need. Microsoft Whiteboard and a touch interface is enough in some places. Others need all the bells and whistles of something like a Clevertouch. For us, option 1 is all that is required.

Can't be any help - but this issue drives me insane. Don't understand my Apple doesn't let the wifi reconnect. They'll happily let mobile networks reconnect without the passcode, but not wifi, its a right pita.

I think that would be extremely unlikely given they operate on different frequencies and its just a co-incidence. We had staff accuse us of installing "3g/4g" signal blockers. Turned out there was a broken O2 mast and no one on O2 had a signal inside the building.
