You can back up courses and config from within moodle, moodle.org will have details. Best if you backup the db and other files as well though, I stop the db from running then use ntbackup to copy the info. This has the added advantage that you then have a backup of the backup so if you need to go back a way you can.

not sure what to do from here, if the accounts still existed i would have set them to use ldap individually. ( or by twiddling with sql) . could be that the accounts are still somewhere even if theyre not in the db.

are both accounts in the same ou? have you set the account to use ldap (prehaps its been used previously with the internal inrolement)

virtualise as many roles as you can and have 2 separate servers with the ability to run all the servers at once, possibly with redundancy built into the servers ( so for istance having 2 dhcp servers live at any one time) but only running with half of the servers during normal operations. Place them in seperate buildings if possible. Have each server backup to the other one and to a tape. some servers will be tricky to virtualise en masse, just ensure they're well backed up and if possible have some spare machinery to restore to.
