After a p2v I'd always recommend removing the redundant hardware devices (as the virtual hardware is *new devices* ) Removing old hardware after a P2V conversion - Virtualization Pro However, where possible, I'd recommend building new boxes and moving over to them anyway -

For peace of mind I'd still keep the physical DC with the virtual as a second. I know it's supported, and I know it *should* be fine...but there's no harm in having a physical beasty after all the issues others have had with virt DCs

One of the major virtualisation benefits is redundancy. So I would say you want to spec your VM sizes, spec a server that can run those and allow for some overhead (maybe also some room for test vms as well if you can afford), and then buy two of them. Having the ability to have a server cluster in N+1 means you can have a catastrophic hardware failure in one of the hosts with no downtime for the guests. Which is schweeeeeeet I'd say though, first step is to decide your virtualisation platform, as there's different requirements for each with regard to how they divvy up the virtual hardware. -
