Rawns Posted October 29, 2013 Posted October 29, 2013 As part of my crimbo present, the wife will get me an ice cream machine. I've done a bit of Amazon browsing but wondering if any of you geekers can recommend a nice cream machine, or if there are any that I should avoid?

Thanks for that, I did some more Googling and it turns out that the Andrew James ice cream maker comes top in most lists so that's the one I've asked for. Thanks for the feedback everyone.

It's a little bit noisy (but then I wouldn't expect it to be silent), and the bowl has to be frozen before it can be used (which takes up space in the freezer and means you to wait 24 hours before you can use it, but unless you buy one of the larger units you can't avoid this) but it makes good ice cream. Mix in milk in small amounts at a time so that it is well combined. Place in fridge to cool Add flavourings and thoroughly encorporate Place in freezer - stir up every hour for a soft ice cream, don't stir for a dense ice cream Enjoy @Rawns and @hawc 2

Combine it with a lime cheesecake and some spun sugar and yo have a delicious dessert. ... 500g/1lb 2oz strawberries, hulled, cut in half and frozen in a freezer bag or on a tray ¼ tsp vanilla essence 3-4 tbsp icing sugar 75g/3oz clotted cream 75ml/3fl oz whipping cream Blend the frozen strawberries, vanilla essence, icing sugar and clotted cream in a food processor for five seconds. With the motor running, pour in the whipping cream and continue to blend until smooth. Spoon the ice cream into a container and store in the freezer until ready to serve. 1
JJonas Posted October 30, 2013 Posted October 30, 2013 I used to make home made rum and raisin ice cream, made a batch once that had so much alcohol in it that it wouldnt set properly, ended up putting the ice cream bowl back in the freezer and pushing the fast freeze button. That fixed the freezing problem. It turned out very potent indeed.

Jersey Milk Ice Cream 500ml whole Jersey milk 300ml double cream 80g unrefined caster sugar 100g glucose syrup 1kg dry ice Put the milk, cream, sugar and glucose syrup in a pan and heat gently until the sugar has dissolved and the glucose is liquid. Set aside. Put on safety gloves and protective goggles and open the packet of dry ice. Wrap it in a tea towel and then a hand towel and smash it into a powder with a rolling pin. (Make sure there are no large lumps of dry ice, as these will remain as lumps in the ice cream). Unfold the towels and shake the powdered dry ice into a glass bowl. Pour the milk and glucose mix into the bowl of a food mixer. (From now on, you need to work quite rapidly to avoid freezing the equipment.) Shake a little of the dry ice into the mixing bowl and, using the mixer’s paddle, mix on the lowest speed until the dry ice dissolves and its vapour clears. Continue to add dry ice, a little at a time, until the ice cream has absorbed all of it. (It may be easier to do this in two batches. It’s important to add the dry ice in small quantities to prevent the ice cream going grainy). Once the dry ice is absorbed, beat the ice cream on the second speed until smooth. Quickly scrape the ice cream out of the mixer and into a container. Freeze until required. It is best eaten within 24 hours. (Source)

I've always wanted to try making his bacon and egg ice cream (some close friends of mine bought me his Fat Duck cook book for my 30th!) but I've struggled to find dry ice! Now I'm getting an ice cream machine, I think it will be top of the list of ice creams to make!
