Same, I can see why people want to do it and I also think that its an amazing feat of science but call me old school, I don't think it is morally acceptable.

EDIT: All I can suggest is, login on a different PC, if her drive maps then there's nothing funny going on with the mapping side of things.
Are you able to browse to the UNC path? \\server\shd\staff\user for example. Not appearing in my computer would imply to me that its not been mapped correctly.

Delete them all then refresh the folder (F5). "My Documents" should be gone. It will be recreated when you log back on as that user. You can then use FSRM to block that file.
