We are looking to deploy Windows 10 and Office 2016. With so many different versions of Windows and Office what would you recommend?

 

Windows 10 Education, Enterprise, Professional

 

Office Professional 2016, standard?

Office 2016 Professional Plus (if not licensed for Office 365 Pro Plus) and Windows 10 Education.

If you've got access to it, then I'd go for the LTSB windows and Office 2016 pro-plus.

We have a OVS Licence however office365 pro plus is not on the portal?

Windows 10 LTSB for sure, and the flavor of Office 2016 I would say depends on the curriculum being taught. If it's not curriculum dependent then 2016 Pro Plus will cover everything.
