Big thing to think about with the appliance is you are stuffed if you cannot boot the main cluster to start that appliance so you should either have that appliance running on another cluster or stick to a physical one. You can still use MS SQL Express which will work for many schools setups just install it manually before hand and setup the DB and point to it during the vcentre installation then you can continue to use MS SQL as your used to.

Did Exchange 2007 not have the transport rules that 2010 has to allow you to do this OOB without 3rd party tools? If it didn't then you can use Exclaimer which is a paid for add-on to do this.

Check the license terms of the font as well as I've had this and the font only was licensed per machine but they thought that was fine to roll out and thus got very stroppy when I pointed that issue out....

Cortana in the car is good when I'm driving, I also like some of the features like playing games and winding her up (plenty of sites list the games, chat and commands). Also going Hey Cortana is good and works well if your in the bath / shower and want to change tunes etc...

Had a range of Buffalo's in my last job all in the end went west, performance slowed right down, AD integration that they claimed worked never did correctly and generally yeh ok to start with but as they went on not great, replaced them all with a nice shiny new tape system. Have got a QNAP TS-453 Pro at home after being recommended it by @Domino and it looking a great bit of kit for home use, so cannot complain so far and seems well built and a decent bit of kit so could be good for small schools use

The way around that, currently, is just ensure you have 1 item under support and then you get access to ever single thing in the catalogue I'm sure one day they will change this like others but that works great at present

I worked at a school that had two rooms of them, not a decision I was involved in or my predecessors either the SLT decided to do it. Looks great on paper, reality was not as good as it should have been. One room was removed just as I was leaving and the other has now gone and been replaced with standard benching and done in a sensible more standard off the shelf style solution which makes it much cheaper to support. Upgrade costs were also scary high as you could only get the upgrade from them, you could buy some bits off the shelf but they had to be quite specific so it was limiting. My advice is to not go that route your tied to that one vendor, if they go bust your stuffed, if they want to charge a sky high price for a spare part they will and you have no choice. If they want a room that looks a bit more funky / designer get some Isis furniture and put decent off the shelf PCs on it or design your own room like I did. With some decent benching and layout, monitor brackets and Tower holders you can get a decent "all in one" desk solution without the custom parts thus spares are cheap and available all over and much cheaper and easier to upgrade.

Never bothered with cages they seem an extra expense but you should seek advice from the schools insurance company as some may require you to do that, for instance Ground floor IT rooms without modern double glazed decent windows needed steel bars over them for added security so they may need you to cage projectors.

I would think that number of vCPU Cores is going to be not assisting assuming you meant vCPUs assigned to the Hyper-V VM rather than what is in the base server? I put on a different thread on this matter that you need to get into the science behind the CPUs and Numanodes around it all and how they translate to vCPUs, with our blades we run we here which have Intel E5-2630 Xeon CPUs in them we never go above 4 sockets with 1 Core in VMware on any VM as it will get worse when you get beyond that due to how VMware will map the vCpus to the physical CPUs, like others have said you can over-do the ram you can also over-do the CPUs. Don't know what the base CPUs are in yours and its not my strongest point how this all maps out but bring them back down to a max of 4 vCPUs with 1 core each and see how that helps and take some advice from above on the ram allocation and see if that helps, if you get the CPU allocation wrong it will spend time waiting for cycles and things and that will contribute to poor performance.
