Could be the VGA cable (if you use VGA) try using another one and see if there is a difference.

This may not help but the computers have adobe reader on right? if so I have found that sometimes the user will need to run that first and then PDF will open. Sorry if that is no help.

You can do this with an Apple TV. Make sure both the Mini and the Apple tv are on the same network and then on the Mini swip up from the bottom, now select the TV and then turn on Mirroring and that should then display your mini on the TV. You could use Wireshark to see what traffic is going on the network could give you a clue, could there be high levels of users on the network when the problems happen. run a ping /t and see if any of them drop or have long ping times. Has any new software been installed before this problem started to happen?
