There are only so many places and people who can give vaccinations legally. There is a maximum vaccination rate based on that. We have 2 5406Rs in use. They have been bullet proof. Thoroughly recommend them. The lifetime warranty is a really nice thing to have too, plus not having to worry about paying for subscriptions etc... In my experience, we don't make that many changes to things on the core(s) so the CLI is fine enough. The Aruba web interface works well for basic stuff too (assigning ports to Vlans being the usual thing we use it for, or plain enabling/disabling ports).

Apparently Google Chrome Remote Desktop can be used to do this for free.

Data protection rules are not optional. We as data controllers need to ensure we're compliant, and the case in Germany has shown that Enterprise/Education editions can be made compliant, and Pro editions cannot. Those domains you listed specify for Enterprise editions and Server editions. They do not specify Pro editions.

I would 100% recommend speaking to a Microsoft licensing specialist to go over the current licensing options, as there are a few schemes these days. I would also highly recommend using Education edition and not Pro, due to the data protection implications. As far as I know, you cannot fully turn off telemetry with Windows 10 Pro, but you can with Enterprise (and Education, as that is built on Enterprise). Basically, Pro will send telemetry to MS with or without you wanting it to. It also disables things like Cortana, tips & tricks and a number of other things out of the box.

We have Chromebooks 1:1 for all our year 5 & 6 children, plus a number of other children across the Trust (based on need). Roughly 1000 devices out in use in total. It has been a big success all in all. We have good buy in from teachers, parents (on the whole) have been supportive and children use them well.

Because it isn't about your use of the data for T&L. You wouldn't need consent for your own use. You need consent to let Google use it for their own use, as a data controller and not a data processor. Think of the non-core services as services that gather data for advertising, profiling and research. None of those things are anything to do with you as a school, so you giving the third party that data for those purposes has no legitimate reason under public task justification. That's why it needs consent. Google don't allow you to pick and choose how the data is processed for those non-core apps, therefore you have to treat them as a separate data controller for all use.

I would treat your council switch as a third party router - a black box if you will. I would handle all your own networking internally. So, yes, connecting all your switches together to your own core via fibre (or via direct attach cables if they're all in the same cabinet) is the way I'd do it. I'd stick with the USW-Pro-48-PoE for the core, as you can connect your 2 edge switches to the SFP+ ports via fibre/direct attach, connect your servers via Cat6 and still have future expandability to upgrade the 2 servers to 10Gbps if you wanted, with 2 spare SFP+ ports.

How do you want to connect your servers to the switches? Copper or fibre? What speed do you want to connect them at? 1Gbps or 10Gbps?

I don't run any Ubiquiti L3 switches myself (we already had HP core switches in place), but I believe you'd be looking at the newer Pro range for L3 stuff. They've recently released their Enterprise range also which has L3 stuff too. So something like a USW-Pro-48-PoE for the core, then USW-48 at the edge. If you're only looking at 3 switches. If you need more in terms of 10G ports (eg. if you have several servers you wish to connect at 10G) you could add a USW-Aggregation as well - so all your switches aggregate into that, and connect in to your core from it. Your servers could then use the spare SFP+ ports on the core. You'd also need a controller. You could either run it as a VM if you have virtualised servers, or you could get a CloudKey2.
