Just wondering how you would do this.

We have one server that is virtualised been a primary school it is the server that does everything DHCP /DNS / DC and the file server. Everything is running fine.

But we have 1 spare licence of Server 2012 that we could deploy as a VM.

What would you use this spare one for?

I'm looking at rolling out office 2016, so my thought was to make a software distro server and Windows update server and just power it up when I need to put out updates or new software. Does this sound like a plan or ?

Yep, split it down.

Do you really want to have to reboot your DNS/DHCP server just because the print server role throws a wobbly (for example) and it's installed on the same instance of Server 2012?
