The core mode does seem to be a bit of a half arsed attempt of removing the GUI.

 

In fact some of the GUI remains, for example setting the timezone and clock can still be done via the GUI even in core setup.

Core mode is more about reducing the attack surface than removing the GUI, the Windows server GUI really isn't heavy at all the only time it's even worth thinking about is when as DMcCoy says you might be running a bunch of VM's.

Well it's possible that at some point a hosted TS app might need an aero or Windows presentation foundation feature. I can't see a reason not to have the option as long as it's not installed by default, it might make the OS more versatile in the future just because you can't think of a reason now doesn't mean in the future there won't be a good reason.
