The thing is ... it can be a bit like the census. If you leave a box open then people will right Jedi for a laugh ... if you put an extreme minority option then some will take the proverbial.

 

IME most transgender folk tend to live a goodly proportion of their life as a particular sex (YMMV) so keeping it at the two options isn't too bad.
