Technically the plain Windows Server 2008 is already End Of Life (so, if you have that, upgrade asap ). It's only Windows Server 2008 R2 that is supported in the same time frame. [update] Ok, I stand corrected: See below.

No, but Windows 10 has been a royal pain when it comes to management of the OS. Roaming profiles being one of the bug bears.

Ok, there looks to be confusion here. Office 365 is not based on FTE, in fact unless you want advanced features, it's free for schools. Now, OVS-ES licensing is a different kettle of fish, which is what I think people are getting confused over, most of us for this order the Desktop pack which provides Windows upgrade, Office and Server CAL license for the school owned devices. OVS-ES FTE calcuations, which last I checked was if a member of staff uses a computer for work for 200 hours a year (which would be the equivalent to at 1 hour a school day, or 5 hours a school week).

I believe @mavhc uses Windows 10 Professional, does require extra work to remove advertising IIRC. At our Primary we went for OVS-ES as it was cost effective.

For new kit, it should be fine. It might take a little while for some of the existing kit to see your new server as the KMS host but they will switch over, in rare occasions sometimes they don't like switching servers, but you can use slmgr.vbs to point them to right server if they ever say they are no longer activated. https://www.howtogeek.com/245445/how-to-use-slmgr-to-change-remove-or-extend-your-windows-license/ If you were using Windows 8 and above, I would suggest using ADBA (Active Directory Based Activation), it's so much easier. Add to the domain and activated.

If you have already licensed the servers with a MAK key it shouldn't try and use a KMS key. The key mentioned basically authenticates Windows Server 2016 and below using KMS, including client versions (Windows 7, Windows 8, Windows 10). You can always contact VLSC to ask for a KMS key for Windows 7 specifically which would show up on Keys and Downloads, but this can take some time.
