If you're fully virtualising, either with two hosts + DAS (replicating) or two hosts + SAN (clustered), I'd also have a physical read only domain controller outside of your setup for a belts and braces approach. Or am I just being old fashioned?!

In all the schools I have worked in, the DRP (Disaster Recovery Plan) has been the most important thing that's always been missing or extremely sketchy.

Yeah I definitely would. It immediately makes the school aware that you know something about safeguarding in the school environment!

I agree with @nephilim. I would also include something about a CRB check - i.e that there (hopefully) would be no issues! If the school is going to get some free work you then I would expect them to pay for this (think it costs around £40) but do bare in mind these can take up to 6 weeks to come back.
