Great choice not to eat meat and I could go with no sausages at all (especially Richmond and similar) but there's nothing on the market yet that's like a property butcher's sausage from the farm shop.

I've sneaked the odd bits in without her noticing, but it's quite hard to disguise disc/cylinder shaped "meat".

When she came round to ours last time, I made it without the sausage meat, but separately I had some marinaded chicken thighs in honey and soy sauce, I cooked these so they were nice and golden brown and served on top of the rice dish. Easy and tasty.

Coat a salmon fillet with Sweet Chilli sauce and wrap in foil, and into the oven for approx 20 minutes. Boil some water and get some rice cooking. 2. In a big salad bowl, add chopped tomatoes, chopped avocado, chopped red onion, Sweet corn, grated carotte, and mixed leaves of lettuce. 3. Break up the salmon and add to the bowl as well as chucking in a handful of prawns. Add the rice. 4. Add salt, pepper, Mayo, and Sweet Chilli sauce. And a dash of squeezed lemon. 5. Mix it all up and serve. 1

Makes 6 portions. 1 large red onion 150g walnuts 1 carrot 150g mushrooms 3 cloves garlic 1.5 tsp mixed herbs 1.5 tsp dried oregano Large can tomatoes 2 tbsp tomato puree 2 tbsp soy sauce 2 tbsp marsala (optional) Veg stock cube Pack of fresh basil Olive oil Mince, blitz or chop/grate very small all the veg together including the nuts. I used the largest holes on my Kenwood’s mincer attachment) Fry the mix up with olive oil and the dried herbs for several minutes Throw in the tomatoes, tomato puree, stock cube, soy sauce, marsala (optional) and crumbled stock cube and simmer together. Chop the basil a bit and stir it in right at the end. I stirred cooked spaghetti into it and topped with grated parmesan (so it ended up vegetarian) I can see me adapting the basic mince recipe into other dishes [emoji4] Edited February 28, 2024 by elsiegee40 2

We now have plums poached in white wine with sugar and vanilla plus some stewed plums for a future crumble [emoji39] Poached Stone Fruit (Dead easy Recipe): Plums, Peaches, Nectarines and/or Apricots split in half and stone removed. Any condition will do. I use ones we don’t want to eat due to ripeness, sweetness or damage! Place in an ovenproof dish cut side down. Split a vanilla pod length ways, scrape out the seeds and add to dish then throw in the pod as well. A few drops of vanilla essence would be fine too. Sprinkle generously with sugar Pour in wine/sherry/alcohol of your choice (I have done this with pretty much everything except beer and cider [emoji23]) so it comes about 2/3 of the way up the largest fruit. Bake in the oven at 160C/320F fan oven for about 30 minutes until the fruit is soft. Let it cool or eat it warm. Serve as it comes or with ice cream or cream. For stewing. Cut the fruit up. Put in pan with a little water and some sugar. Pop the lid on and simmer gently until just soft. 1
