I have a Early 2015 MacBook Pro, with only 120GB of storage, i've never upgraded a macs storage before (looks simple enough from what i've seen)

Question i have is can i buy any old M.2 SSD and put it in? Or do i have to buy specific ones? Looking for around 500Gb atleast really. Looking at this (Which i also have in my main PC atm)

Apple has there own special adapter for the SSD's. When the SSD failed in dad's MacBook Pro, he got the Transcend 725 JetDrive. For the 2015 model, you need this 820 JetDrive. It comes with a caddy so you can use the old drive as external storage.

Not really. The cheaper ones there are commodity SATA drives which will fit in older MacBook Pros. Once you filter the list to Retina Macbooks (11,1 or later), you will see the price suddenly jump up.
