These have been in every Epson projector box we've had for years and always wanted to know what it's for, anyone know?

If it's the same as some of the other makes it's normally to hold the wireless dongles when you have them, because wireless dongles are super fragile and need some extra support! *cough*

Is it some sort of cable guide/tidy that goes on the back?

You can get a USB wireless receiver for the projectors and this holds it in place / makes it harder to steal.
