Is there a way to disable the global email directory so students cant see staff email addresses.

The way we do it with on-site Exchange is with the msExchangeQueryBaseDN attribute - setting this to their own OU in AD stops them from querying outside of student groups. Not sure if this is the same in O365 - it may be if you define this as a field to pull through from AD. If you then hide all students from the address books, they can't see anyone. Staff just get left as normal.

Not tried this recently but the above should work assuming you have the extended exchange attributes installed, and that you use AD Connect/DirSync.
