I'd like to configure the default windows download directory to point to either the users (redirected) documents folder, or ideally to a subfolder of that (which may or may not exist yet).

I've looked at a few gpp/gpo suggstions for this, howeve I've not had much luck with them

Has anyone had any success with this, and if so what was the solution?

Group Policy - User Configuration / Windows Settings / Folder Redirection / Downloads / Path (e.g \\server\homearea\%USERNAME%\Downloads)

This is the basic system as I'm sure you've seen. However, it should work if everything else is in order - I can see their IE downloads are going into their redirected Downloads folder now. This is with local profiles and mandatory profiles here - couldn't say it works with roaming but I'd imagine it'd be fine.
