I have been asked to print a list of emails to and from external addresses for one user. Not an exchange expert. How Can I see/list/seaerch the mailbox contents?

You could do this with System Manager

Log on to your Exchange Server

Run Exchange System Manager (I have a desktop shortcut but I imagine it's on the Start Menu

Expand the bottom option 'Tools'

Choose Message Tracking Center

You don't need to enter something in all of them just choose the timeframe to search, enter your Exchange Server name in the Server box and the user you want to list for put them in the Sender box for the list of emails they sent, then in the Recipient for the one's they received.

you need to turn on message tracking first, but this is the best (and only?) way.

Do you need the throughput of the exchange mailbox or the actual email contents sent/received?

If its the latter then you can just give your username access to the account using the active directory users mmc (on exchange unless you have the exchange management mmc installed locally) and once it replicates the change which can take a while depending on the number of items etc. Then just go to http://{exchangesvr}/exchange/{mailbox address}/ and you should get in.
