You would need to setup Inter-vlan routing. Normally you would do this on the core switch and set the device as everybody's default gateway.

a couple of things. Depending on how your ESXI is installed you may not acutually be able to expand the single datastore (if ESXI is installed to the same partition as the datastore then 99.9% of the time you can't expand) this is down to the way the disk paritions are laid out when ESXI is installed. As mentioned above you can't span a vmdk across multiple datastores. You can have multiple VM disks in the same vm on different datastores. This means that effectively you could run 2 disks in the VM on different datastores and then use the "Spanned disk" feature inside windows to make them appear as one disk. Create a Spanned Volume

nowadays with USB 3 the need for lots and lots of wires to be plugged in and out is reduced via USB 3 docks. Although these can be expensive. CLI is a must with HP/3com switching as mentioned. I would also state you can copy and paste command strings into them for example straight out of documentation and configure a switch with pasting say 15 commands into the cli and its all done. On another note I think the V1900 series is a little underspecced for normal networks (not sure why just do). Personally I'm an E range kind of person (28/2900's) for edge switching.
