It's possible that something isn't configured correctly on the MFP so that the copy jobs can be logged by PaperCut.
Do you know how the embedded PaperCut software was installed on this MFP? Going back a few years, the only install process was a more manual one, where a lot of changes had to be made manually on the MFP. Now, PaperCut provide a GUI-based "Remote Operation Client" tool that handles the initialization/configuration/installation process.
Another note: in general, if we ever run into issues with the PaperCut embedded software on our Ricohs, we'll go through an uninstall/reboot/install process and then see if the issues clears up. If you're not familiar with the uninstall process, you can find info in this whitepaper from PaperCut (I assume you're using the SmartSDK version instead of the older SDK/J version):
