Insert Tab --> Date & Time --> Language set to U.K From the drop down menu before you insert the date ?

 

Also what settings have you checked or looked at ?

Yep, all settings are showing English UK and our date format. I have checked the settings in Word, regional settings on the pc spell check regional settings etc. All set to UK.

close word down, show all hidden files and folders ( folder options in control panel ) --> find the relevant default template files which is generally in the user profile or default user profile somewhere --> delete them, re launch word and try again ?

Was it entered as a Word field? If you press ALT+F9 (to toggle view all field codes) you can edit the field code to format the date how you want it:

 

{DATE  \@ "dd/MM/yyyy" \* MERGEFORMAT }

I found if you SELECT the date field, then click on the INSERT tab, then select DATE & TIME, it may still be in US date format.

If you change to UK or EU or AUS or NZ etc it should fix it.

 

Like you all my other settings were all not US, so I was pretty baffled.

 

This fixed the problem for me. Hope this helps
