Can someone put my mind at ease. We have three new VM hosts. They report that they have one processor socket each. So getting the Data Centre version we only need one copy per host and we can run as many 2008 VMs as we want?

Nope. Minimum buy for Datacenter is two licenses (and sockets, technically) per host.

 

"Windows Server 2008 R2 Datacenter Edition may only be run on servers with a minimum of two processors and requires a two-processor minimum purchase."
