Let me get this strait, would this work

 

If I get a Netgear GSM7328FS at the core of my network (one of these at the core)

Connected Port 1 to a AD Domain Controller (via Fibre NIC Card), Port 2 to an Exchange Server (via Fibre NIC Card)

Then connected from a SFP port to a SFP port on a Netgear GS748T (Lots of these around the site)

Then connected from the GS748T over Gigabit Ethernet to a workstation

 

Would this workstation now have 1GBPs speed communicating with my AD Domain Controller?

And would this be a good, sustainable network?

So good thing: You haven´t bought the Netgear. Please consider buying something else, e.g. HP E4800 (JD009A) because almost everything else has better software support than Netgear...

Yes,

as you have 24x SFP modules, you could use more than one 1Gbit slot of your server and do link aggregation (e.g. with LACP protocoll)

 

And would this be a good, sustainable network?

 

How much money did you get to upgrade your network? Imagine you buy two of the mentioned HP E4800 switches. You could stack them with stacking modules and cables, put in two power supplies, each. Then you take two SFP ports on your Netgear GS748T and connect one of it to one of the E4800 and do link aggregation as well. So a more or less redundant core with load balancing and failover mechanism to your edge...
