creese Posted October 11, 2011 Posted October 11, 2011 A quick snap of my cupcakes made last night. The sponge is made with either courgette or butternut squash with rice flour instead of wheat. The icing is 'traditional', butter, mascarpone and sugar. I was surprised how good they are. Next is a chocolate cake made with beetroot. 2

We're very into this malkarkey with the littly - we like to know exactly what she's eating, and see if we can make "healthy" nicer to look at as well. I want to look at healthier homemade crisps too. Good god, what happened to the tech who lived on junk and was pleased about it?!? Parenthood, how strange...hah!

My ultimate test will be dropping some into the grandkids later. There are also recipes for potato, sweet potato and aubergine.

Trade description and all that... I'll take butter and soft cheese and even sugar over wheat. Especially when you consider the amount of veg in the sponge as opposed to the amount of icing. Is dairy unhealthy? Is any food unhealthy in moderation?
