I reckon they had to use a really thick coffee mix and then boil the hell out of the milk before mixing. Leave it to settle for 5 mins then use Photoshop.

No, they actually do it in store - our local coffee shop does their own logo using a little wooden spatula. For my daughter's birthday they did some balloons on hers and the words happy birthday.
