Hi I want to remove certain fields from the moodle profile page for example the Optional for im etc etc.

Not sure if they can be removed easily. But you can set it so other students can see them.

site admin>users>permissions>user policies>hide user fields (near bottom)

Hi is they a way to stop them for the current student? when they first login to moodle they have the optional field any way to disable this?
