We use Access Based Enumeration. If a use does not have permission to the folder they don't even see it. Works well but as with all measures you put in place it's down to the end user to keep it secure.

I heard ProteMac Logon Sentry is a good app for monitoring password protected folders, anybody used this software?

For password protecting folders or apps on a Mac, Espionage works really well.

 

I think there's an AppleScript someone wrote which does exactly the same thing as ProteMac, but for free. I'll see if I can find it.

You could host the shared folder on an non domain member server! That would always ask for credentials then.
