Slow 2003 servers

This is an odd one but here goes....

 

I have a couple of old Servers that were VM'ed just before Christmas, they are starting to run slowly and looking at their prefomance graphs one is at times thismorning hitting 6800MHz and the other 6387MHz

 

Their memory usage is only around 2GB and I can't see anything unusual happening on the system (no Win updates or AV scans) and I think their are less people on than normal (year 11 left) but still it seems high usage and the servers are running slow causing the network to run slow also.

 

their network usage has only a couple of times hit around 2Gbps but that just seems to be at lesson change overs so nothing to worry me there

 

any ideas of something I could do to check where the problem is occuring and any solutions other than building new servers which I'm working on when time allows (not frequently as we have too many thing going wrong around the place)

the Disk Usage of the 2 guests was fairly normal (lesson change times had peaks)

 

the servers don't take much of a blow from the Disk access as it's straight through to the san for the ESX box and it's FC so that shouldn't be slow
