I've just noticed our uBlock Origin extension for Chrome has been turned off because it is no longer supported.

Two questions:

1. To remove, is it just OK to change the GPO to 'Not Configured'? I read somewhere to just delete the details in the setting but then it won't let me delete it, leave it enabled and save it, saying there must not be blank (it's the only entry)... so the only other option is to change it to 'Not Configured'.

2. What are we using now? Origin Lite?

Yeah, Lite works fine.

I have all the extensions in one gpo, so just removed that one line

I am using Lite standalone for myself and a few users but how have you deployed through GPO or Google Admin? i want to bulk suppress the alerts that pop up and configure the lists.
