How would I record consent in SIMS if I had three difference option that I wanted to mark chose from per student?

If you're not wanting to use the Consent area of a data record (which is only for tickboxes, ie consent/nonconsent) then you can create UDF User Defined Fields.

 

Not sure if they can utilise a Lookup which would allow the three options to be chosen from the dropdown, but that's the area to look in.
