is it possible to use configurator to deploy ibooks books (not the app itself) to a bunch of managed ipads?

You can via Profile Manager. I believe a book operates in the same way as an app - you need to buy it from VPP and then download it to the Mac, then add it to the iPad (via the Apps screen)

 

But I am not 100% sure as we do our book pushes over the air.
