Medium Rare for me, which seems to be preferred when people are subjected to blind testing.

 

Sous vide is also an amazing way of rendering cheaper cuts of meat into melt in the mouth goodness, although when you tell someone you cooked the beef for 20 hours, you tend to get funny looks.

he he, i did a silverside for 11 hours for my sis and bro-in-law, unfortunately (for me) i had to do it medium, it was pretty nice though

How do you avoid food poisoning from Blue/Rare though? It isn't cooked!

 

It's something to do with the fact that bacteria can't penetrate very far into the meat so searing the outside gets them. At least that's what I've always been lead to believe. It's completely possible that it's bull poop.

People who have steak more cooked than rare deserve to be run over by a tractor and then fed to the birds!

I just can't handle pink steak. I have no idea why, I'm fine with duck, lamb etc. but any pinkness in steak just makes me want to puke.

Make sure you know exactly where the meat is from, how fresh it is, and how it has been stored/prepared. Generally speaking, no blue steaks from chain restaurants or supermarket meat imo.

Personally I like mine medium-rare or medium according to that guide. Pink in the middle, but not oozing all over the place is how I ask for it :-)

this is how i understand it. The reason why rare burgers are a bad idea unless you are sure of the provenance and preparation of the meat
