Have a look at this. This only requires one license per Host and you don't have to worry about running Backup Exec backups to get file level recovery. VMware Backup for ESX and ESXi Looks like they are local to you too.

Set it up RAID5 as others have suggested. This will also give you redundancy in case a disk fails. -
