Previous Versions in XP,Windows 7 and Server 2008

We have a virtual file server running Server 2008 with our file shares on a number of drives (Staff, students, profiles etc...). I have enabled Shadow copies on these volumes and it works. The issue we have is with viewing the Previous Versions in the Previous versions tab on a folder.

At the moment if we try and look at the Previous versions for a folder within one of the drives on a Windows 7 or Server 2008 computer we only see older versions, the latest one is 1/8/2012 at 15:00.

If we look at the same folder on a windows XP machine we see the latest copy. What could possibly be causing this?
