Shirleand learning content library

Hello all, we have recently installed Sharepoint and bought into the content from shireland, i want to 'tag' if thats the right word all the content into subjects so that for example all content related to IT (be it in English, maths etc ) so that it looks the same as the picture i include (which proves it is possible as shirelands themselves do it), anyone have any ideas?
