I know this question probably gets asked alot but I would like a more "up-to-date" answer

 

I use Acronis/Ghost at the moment.

 

Can someone recommend me another piece of software I don't mind how expensive/as long as it does the job.

 

For backing up/restoring images from Hard drives.

ImageX, it is the same tech used for WDS but the individual tool is available in the Windows AIK bootable environment and other 32bit Windows environments. Command line but has nice stuff like single instance storage that will let you have multiple images (like for different setup stages/software bundles) that only store the common files once allowing you to fit several different configurations in around the same space as one. You also have offline editing, heavy but quick compression and storage agnostic file structure to.

Apologies for it being the same type of software that you have used but you can't beat it it is the world leader in this field at all levels.

At my school we have a VMWare server running PBA (The Canned OS Project: Personal Backup Appliance Getting Started) which handles our backups - then for restoring we have a USB key running Insert Linux which runs the PBA client.

 

We are also looking into running, and have a test box, running Amahi which we may use for backps, which runs with PBA - all on Fedora 8. This provides a manageable web interface - which is pretty nice but atm, we are using the above solution! so much easier, and time saver!

It does the whole slipstream/creation image process, no clients needed.

It is not cheap, but there is a 40% education discount, and they were willing to do a H/P for it.

Runs in VM if you want.

 

I don't use it as it cost too much, although I should upgrade from Powerquest DeployCentre.

They also do another unit to keep updates up-to-date, all integrated into AppDeploy.com - The Application Deployment Information Center, which they own.
