Once you've added "Parental Consent" to the right hand side, click on it and the field list on the left will change from the student details(etc etc etc) to the fields relating to Parental Consent - you then need to add at least one field from here.

 

I can't find Consents in the list to give you the exact screenshot, but it's the same concept:

There is only one data field under Parental Consents, which (unhelpfully in this case) is itself called Parental Consent - so on the left of your screenshot you need to add the field over to the right as you would any other field.

If you are only seeing [count] then I don't think you have permission to see that data. I see the following but I don't know how many of these are user defined and how many are standard SIMS field names.

He's only seeing (count) on the right hand side because he's not selected sub-fields on the left hand side, within that blue sub-data-set.

 

I have permissions to all of SIMS and see the same as your screenshot when not inside the blue dataset, but if you click your mouse onto the Parental Consent dataset on the right, your field set on the left will show the same as OPs.

Thanks! I think I finally worked it out but... I tried to add a filter for just one of the consents i.e. Appear in media. When I ran the report, it still had all the other consents on there (separated by commas) with the count for 'Appear in media' at the end. Not sure if I'm still doing something wrong or if the consents have all been set up incorrectly in the first place? I can generate a CSV file using the bulk update facility - that shows the children's names with a column/tick box for each consent which is easier to read but I can't seem to generate a report just for specific consents which would be useful.

Thanks for all the help. I should have the right permissions for this but the data sub-sets just don't appear. I will check the persmissions though, just in case. I will try the 'Parental Consent PAH' import too. Thanks again.
